Couscous porridge with caramelized apple

Ingredients for 2 servings:

  • 100 g couscous
  • 2 dates, pitted
  • 300 ml rice milk (rice drink)
  • 1 m.-sized apple
  • 20 g almonds
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 1 tbsp rice syrup, optional

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

vegan – free from industrial sugar

First, finely puree the dates with 50 ml of rice milk. Bring the remaining rice milk to a boil with salt. Immediately remove from the heat. Stir in the couscous and date milk. Let the mixture swell for about 10 minutes. In the meantime, slice the apple into thin rings and remove the cores. Caramelize the apple slices in a pan on both sides over medium heat, either as they are or with rice syrup. Pour the porridge into two bowls. Arrange the apple slices on top. Serve sprinkled with almonds and cinnamon. Tips: You can also vary this recipe according to your taste. Instead of rice milk, you can also use almond or coconut milk. Instead of almonds, you can use granola or toast the almonds. The same applies to sweetening (honey, maple syrup). I personally don’t need any additional sugar. The dates were sweet enough.
