Iceberg lettuce with peppers and mandarins

Ingredients for 4 servings:

  • ½ head of iceberg lettuce
  • 1 can of mandarin oranges (175 g)
  • 1 bell pepper(s), red
  • 10 parsley stalks
  • 200 g yogurt, 3.5% fat
  • 3 tbsp mayonnaise
  • 2 tbsp lemon juice
  • salt and pepper

Wash and trim the iceberg lettuce, then cut into bite-sized pieces. Drain the mandarins and let them drain well. Wash and deseed the bell pepper, then cut into bite-sized pieces. Mix all three ingredients thoroughly but carefully in a large bowl. Wash the parsley, spin dry, and finely chop. Mix the lettuce with the yogurt, mayonnaise, and lemon juice to make a dressing and season with salt and pepper. Arrange the salad on plates, drizzle with the dressing, and grind over a little more pepper, if desired.
