Broccoli and Cauliflower Muffins

Ingredients for 6 servings:

  • 700 g broccoli, frozen
  • 700 g cauliflower, frozen
  • 4 eggs
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

approx. 6 muffins

Steam the broccoli and cauliflower until tender. Let the vegetables cool and mash with a fork. Whisk the eggs with salt and pepper and toss with the vegetables. Divide the mixture among muffin tins previously greased with olive oil. Top each with a few drops of olive oil. Bake the muffins in the oven at 175°C (top/bottom heat) for 15 minutes and serve warm.
