Breaded cauliflower florets

Ingredients for 4 servings:

  • 1 cauliflower (approx. 750g)
  • Salt
  • 80 g flour
  • Pepper, white
  • 1 pinch(s) caraway, ground
  • 3 eggs
  • 120 g breadcrumbs
  • 30 g butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the cauliflower, trim the florets, including some of the stem, and blanch them in boiling salted water for about 6 minutes. Rinse with cold water and drain. Season the flour in a deep plate with salt, pepper, and caraway seeds. Whisk the eggs in another plate and season with salt. Place the breadcrumbs in a plate. Preheat the oven to 220 degrees Celsius and grease a baking sheet. Coat the cauliflower florets one after the other in the flour mixture, then in the eggs, and finally in the breadcrumbs. Place them on the baking sheet, melt the butter in a saucepan, and drizzle evenly over the florets. Bake in the oven for about 15 minutes, until the cauliflower florets are nicely browned.
