Quinoa salad with oriental spices

Ingredients for 4 servings:

  • 1 cup quinoa
  • 2 cups water
  • 3 carrots
  • 1 cucumber(s)
  • 250 g chickpeas
  • 2 m.-large onion(s), red
  • 3 tbsp rapeseed oil
  • 2 tbsp vinegar
  • 6 tsp coriander powder
  • 2 tsp cumin powder

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Bring the quinoa and water to a boil and let it simmer for 20 minutes. Cut the vegetables into approximately 0.5 cm pieces and place them in a bowl with the chickpeas. Mix the oil and vinegar together, pour over the salad, and toss to combine. Add the coriander and cumin.
