Zucchini salad with mint and goat's cheese

Ingredients for 2 servings:

  • 3 m.-large zucchini
  • 8 mint leaves
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 4 tbsp, heaped goat’s cheese with herbs
  • 1 tsp, heaped curry powder
  • 1 dashes fish sauce
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut the zucchini into fine spirals using a spiralizer. Finely chop the mint leaves. Then mix all the ingredients and fold them into the zucchini spirals. Season with salt and pepper.
