Vegan quinoa salad with chickpeas

Ingredients for 4 servings:

  • 1 cup quinoa
  • 2 cups water
  • 500 g chickpeas (about 2 cans of 400 g each)
  • 3 handfuls of cherry tomatoes
  • 1 onion(s), red
  • ½ bunch parsley
  • 1 sprig of mint
  • ½ lemon(s), zest
  • 3 tbsp fruit vinegar
  • 3 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Rinse the quinoa and simmer in a 1:2 ratio with water until the water is absorbed. In the meantime, finely chop the onion, tomatoes, and parsley. Mix all ingredients together in a bowl. Finally, fold in the quinoa and season with salt and pepper. This salad is perfect for taking to work, school, or a picnic. Tips: I can imagine feta cheese in this salad. The mint gives the dish an oriental touch. If you want to enhance this, spices like cumin and turmeric go well with it. The salad tastes great both hot and cold.
