Kidney bean cubes with cheese core

Ingredients for 2 servings:

  • 1 can kidney beans
  • 1 small can of corn
  • ½ cup oatmeal, fine
  • Spice(s) of your choice
  • 3 slice(s) of cheese, e.g. butter cheese or Gouda
  • 50 ml water
  • 50 g breadcrumbs

Working time approx. 20 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 27 minutes

Vegetarian

Grind the oats into flour using a food processor or similar. In the meantime, drain the kidney beans and corn and grind them as well. Add the spices of your choice and the water to form a cookie dough-like mixture that is easy to shape with your hands. Stack the three slices of cheese on top of each other and cut into 6-8 small cubes. Form the dough into medium-sized balls, flatten them, and fill with the cheese. Press the mixture into a cube-like shape and roll in breadcrumbs. Fry in a pan with plenty of oil. The cubes are vegetarian, but can also be filled with vegan cheese or served as a snack. I like to eat them with fresh vegetables, rice, and sambal oelek.
