Tortilla with beans

Ingredients for 4 servings:

  • 6 flour tortillas
  • 1 bell pepper(s)
  • 1 pack of mozzarella or Emmental cheese, grated
  • 1 can beans, red
  • ½ tsp cumin powder
  • ½ tsp onion(s), granulated, or 1 small finely chopped onion
  • e.g. salt and pepper
  • chili powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Quesadilla, quick, vegetarian and filling, great for freezing

Rinse the beans under cold water and set aside to drain. Chop the bell peppers very finely or chop them with a chopper or turbo mix. Mix the beans with the onions, spices and cheese and mix until smooth. Spread the mixture on one half of each tortilla. Fold the tortillas closed and heat two at a time in a large pan over medium heat until the cheese is nicely melted. Turn them over and heat briefly on the other side. Cut the tortillas in half and serve. Serve with a dip made from equal parts BBQ sauce and mayonnaise or with crème fraîche, herbs and garlic. Tip: If you want to make them in advance, freeze them individually in freezer bags. To thaw, place them in the microwave on high for 2 minutes.
