Zucchini slices with green pepper sauce

Ingredients for 6 servings:

  • 60 g butter, room temperature
  • 1 tbsp parsley, flat, finely chopped
  • 1 tbsp chives, finely chopped
  • 1 tbsp peppercorns, green, pickled, crushed
  • 1 tbsp rosemary, fresh, chopped or 1 tsp dried
  • 60 ml rapeseed oil
  • 6 zucchini, cut into 2.5 cm thick slices
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Combine butter with parsley, chives, green pepper, and rosemary. Heat the oil in a large frying pan and fry the zucchini slices until golden brown on both sides. Drain on kitchen paper. Serve the vegetables with the herb butter, season with salt and, if desired, black pepper, and serve hot.
