Ingredients for 4 servings:
- 1 can Jackfruit, young
- 2 tbsp tomato paste
- 2 tbsp olive oil
- ½ tsp smoked salt
- 1 tsp paprika powder
- 2 avocados
- ½ tbsp lemon juice
- ½ tbsp agave syrup
- 4 tbsp olive oil
- ½ handful of parsley, roughly chopped
- 1 tsp sesame, black
- some salt and pepper
- n. B. Sauce (cashew sauce)

Marinate the jackfruit the classic way. Mix together tomato paste, olive oil, smoked salt, paprika powder, and salt and pepper to taste. Add the jackfruit and let it sit for at least 15 minutes. Then fry the marinated jackfruit for about 10 minutes. In the meantime, prepare the avocado layer. Peel and pit the avocados and cut them into rectangular pieces about 1 cm in size. Mix with the other ingredients and stack them on two plates to form a round “bed.” Now stack the jackfruit on top and garnish with black sesame seeds, a little cashew sauce, and/or fresh parsley, if desired. The avocado tartar with jackfruit goes particularly well with homemade potato wedges. Tip: Instead of the parsley, you can also use a spring onion. Simply cut it into fine slices with a little salt and pepper and fry it over medium heat for about 5-8 minutes.
