Cauliflower and sweet potato pan

Ingredients for 2 servings:

  • 1 onion(s), red, finely chopped
  • 1 head of cauliflower, cut into florets
  • 2 tbsp vegetable oil
  • 1 medium sweet potato(s), diced
  • 1 red bell pepper(s), finely chopped
  • ½ tsp cumin
  • ½ tsp coriander powder
  • some chili flakes
  • 1 tbsp curry powder
  • salt and pepper
  • 1 tomato(s), diced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegan

Sauté the finely chopped onion and cauliflower florets in a covered pan in vegetable oil for five minutes. Add the diced sweet potato and sauté for another five minutes with the lid closed. Then add the finely chopped bell pepper and sauté for another five minutes with the lid closed. Now add all the spices and the finely diced tomato and sauté for a final five minutes with the lid closed.
