Peel the carrots, quarter them lengthwise, and cut them into approximately 0.5 cm long pieces. Peel the potatoes and cut them into roughly equal-sized cubes, similar to the carrots. Now it’s time for the kohlrabi stalks. Cut the leaves off the kohlrabi. Pick off the smaller leaves. For the larger leaves, only use the stalks, making another cut where the large leaf is. Wash the stalks and cut them into pieces about as short as the carrots. Heat the oil in a lidded pan and gently fry the carrots, not over full heat (I used level 7 out of 9). Then add the kohlrabi stalks and potato cubes. Put the lid on and let the contents simmer for a few minutes. Reduce the heat (I used level 3 out of 9) and season the vegetables with stock. Keep the lid closed when you check on it, always let the condensation run in and stir once. When the potatoes are cooked, the other vegetables are usually cooked too. Then stir in the wild garlic paste, but it works without it too. I made kohlrabi leaf vegetables with this vegetable. Without the kohlrabi leaf vegetables, this dish might only be enough for one person. So it can be used as a main course or as a side dish. It would also go well with a kohlrabi patty. The leftover leaves can be used to make kohlrabi leaf vegetables or my kohlrabi leaf foam soup. You can find both recipes in the database. If you’re wondering what to do with so many kohlrabi bulbs to make this dish, just watch the many people in the store (it used to be the same) who just buy the bulbs and twist off the good stems with the greens. If the leaves aren’t wilted yet, you can usually take them away for free.
