Ingredients for 1 servings:
- 175 g flour
- 2 tsp baking powder
- 150 g brown sugar
- 2 bananas, mashed
- 50 g candied lemon and orange peel
- 25 g nuts, mixed, chopped
- 50 g dried cranberries (or lingonberries)
- 5 tbsp orange juice
- 2 eggs, whisked
- 150 ml oil
- 75 g powdered sugar
- some orange peel, grated
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Grease a 20-25cm loaf pan and line it with baking paper. Sift flour and baking powder into a bowl, then stir in the sugar, bananas, candied lemon peel, candied orange peel, nuts, and cranberries. Combine the orange juice, eggs, and oil and add to the rest. Stir until a smooth batter forms. Pour the batter into the pan. Bake at 180°C (preheated, top/bottom heat) for about 1 hour. Cool on a wire rack. Mix the powdered sugar with a little water and then spread the icing over the cake.
