Beans in oil

Ingredients for 6 servings:

  • 1 kg beans (runner beans), green, threaded and broken into pieces)
  • 3 large onions, finely chopped
  • 7 cloves garlic, finely chopped
  • ½ cup olive oil
  • 1 kg tomatoes, ripe, peeled and cut into small pieces
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Lubieh b`Zeyt, Lebanese, delicious cold or warm

Heat the olive oil. Slowly cook the onions and garlic until soft and golden. Add the beans and tomatoes. Bring to a boil. Reduce the heat and simmer gently until the beans are tender and the liquid has evaporated (careful, it can burn). Add salt and pepper to taste near the end. Delicious cold as a salad or warm with flatbread.
