Mussels in tomato sauce Italian style

Ingredients for 4 servings:

  • 2 kg mussels
  • 1 large onion(s)
  • 6 garlic cloves
  • 1 pepper, red
  • 7 tbsp olive oil
  • 1 gr. can/n tomatoes, chopped
  • 1 shot of white wine, optional
  • 1 bay leaf
  • Salt and pepper, black
  • 1 bunch parsley, flat, chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Wash the mussels and remove their beards. Discard any open mussels. Finely chop the onion, garlic, and chili pepper. Heat the olive oil in a saucepan and sauté the finely chopped onion, garlic, and chili pepper. Add the tomatoes (or a splash of white wine, if you like) and the bay leaf, and season generously with salt and pepper. Add the mussels to the pan and cook in the covered pan for about 10 minutes. Sprinkle with parsley and serve. Serve with baguette. Using up leftovers: Remove the mussels from their shells. Cook the spaghetti and toss with the mussels and tomato sauce. Serve with Parmesan cheese.
