Ingredients for 2 servings:
- 1 bag of arugula
- 1 mozzarella
- 2 carrots
- 1 bell pepper(s), red
- 50 g hazelnuts
- 2 cocktail tomatoes
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 17 minutes

Whisk together vinegar, oil, salt, and pepper. Chop all ingredients as finely as possible to ensure the sauce reaches all parts of the dish. Briefly roast the hazelnuts in a dry pan. You can also add pumpkin seeds if you have them. Mix all ingredients together.
