Apple pancakes with oat flakes and yogurt

Ingredients for 3 servings:

  • 3 apples
  • 3 eggs
  • 50 g sugar
  • 1 tsp cinnamon
  • 100 ml carbonated mineral water
  • 50 g oat flakes
  • 150 g Greek yogurt
  • 120 g flour
  • 1 tsp baking powder
  • some oil for frying
  • n. B. cinnamon sugar or powdered sugar for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the apples, core them, and coarsely grate them. Separate the eggs. Place the egg yolks in a mixing bowl and beat them with the sugar, cinnamon, and sparkling water until frothy. Then stir in the oats, yogurt, flour, and baking powder. Beat the egg whites until stiff peaks form and fold the beaten egg whites and grated apples into the batter. Fry small pancakes in a pan with oil. Sprinkle the pancakes with cinnamon sugar. You can also use powdered sugar if desired. This amount of ingredients makes about 10 pancakes, depending on the size.
