Ingredients for 1 servings:

  • 150 g wheat flour type 405
  • 35 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp, leveled baking powder
  • 1 tbsp coconut oil
  • 180 ml oat milk (oat drink) or other plant milk or mineral water
  • ½ tsp psyllium husks
  • e.g. coconut flakes or lemon peel or rum flavoring

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

for 4 waffles

Mix the flour, sugar, vanilla sugar, and baking powder together in a bowl. Then add the coconut oil and plant-based milk or sparkling water and mix with a whisk. Finally, stir in the psyllium husk and any extra ingredients, such as coconut flakes, and let it rest for about 10-15 minutes. Preheat the waffle iron, grease it, and bake the waffles one at a time. It’s best to place them on a wire rack or similar surface rather than on a plate. Serve with powdered sugar, ice cream, or fruit. This recipe makes 4 waffles. Tip: Instead of the psyllium husk, you can also add 1 tablespoon of applesauce or 1/4 of a mashed banana to the batter.
