Ingredients for 3 servings:
- 200g penne
- 400 g asparagus, green
- 200 g cherry tomatoes
- 1 large avocado(s)
- 1 tbsp pine nuts
- some basil leaves
- ½ lemon(s), juice
- 200 g crème fraîche
- 2 garlic cloves
- some Parmesan, grated
- salt and pepper
- e.g. chili
- some olive oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook the pasta according to the package instructions. Cut the green asparagus into pieces and sauté in a pan with a little olive oil. Halve the cherry tomatoes and add them to the asparagus. Sauté everything for 3-4 minutes. Meanwhile, prepare the pesto. Finely purée the avocado, lemon juice, crème fraîche, garlic cloves, basil, and pine nuts with a hand blender. Season with salt and pepper. Drain the pasta and add it to the asparagus. Mix in the pesto. Serve with shaved Parmesan cheese and chili.
