Tomato-cucumber-avocado-arugula salad

Ingredients for 1 servings:

  • ½ avocado(s)
  • 1 tomato(s)
  • 6 cm cucumber(s)
  • ½ onion(s), red
  • 1 handful of arugula, possibly more
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • salt and pepper
  • 1 dashes sweetener or agave syrup, optional

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the halved avocado into small pieces and place it in a suitable bowl. Add the lemon juice and oil, season with salt and pepper, and mix well. Add sweetener, if desired. Cut the tomato and cucumber into cubes similar in size to the avocado and place it in the bowl. Chop the arugula and mix with the finely diced red onion. This is one serving for GAT members; as an appetizer, it’s enough for two servings.
