Omelette with feta cheese, mint and black olives

Ingredients for 2 servings:

  • 4 eggs
  • 1 tbsp olive oil
  • ½ onion(s), red, in fine rings
  • 50 g sheep’s cheese, crumbled
  • 1 handful of mint, fresh leaves
  • 10 black olives, pitted, halved
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the olive oil. Whisk the eggs, add the feta cheese and mint leaves (slightly torn if desired). Season with pepper and a little salt. Pour the egg mixture into the pan and let it set slightly. Top with onion rings. Continue to set until the omelet can be turned using a plate. Continue frying briefly. To serve, cut into pieces and garnish with olives, the reserved mint leaves, and onion rings. The omelet also tastes good cold as finger food. Cut into bite-sized squares and skewer them with toothpicks along with the olives, mint, and onion.
