Kefir-oat pancakes

Ingredients for 1 servings:

  • 2 eggs, size M
  • 100 g kefir
  • 1 pinch of salt
  • 35 g wholemeal oat flour
  • 2 g baking soda
  • some coconut oil, virgin for frying

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Place 1 teaspoon of oat flour in a small bowl. Mix with the baking soda and set aside. Mix all other ingredients thoroughly and let stand for 10 minutes. Just before preparing, stir in the remaining oat flour and baking soda. Gently heat the pan and melt the coconut oil. Pour the batter into the pan and fry slowly over medium heat until golden brown. This takes about 5 minutes. Note: I kept the batter neutral, so you can add sweet or savory toppings.
