Pancakes for those in a hurry

Ingredients for 2 servings:

  • 200 ml milk
  • 30 ml carbonated mineral water
  • 150 g flour
  • 2 tbsp sugar
  • 1 pinch of salt
  • 2 eggs
  • 20 g butter

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 23 minutes

Combine all ingredients in a stand mixer. One or two presses of the button are all it takes to blend everything. Heat the butter in a hot pan and pour the batter directly from the container into the pan. Use about 1 ladleful; I do it by taste. Fry the pancakes for about 3 minutes on each side until golden brown. Dust with powdered sugar, if desired, or serve with jam or compote. Note: You don’t need to let the batter rise; if you’d like, you can let it rise for 15 minutes. This recipe yields about 6 pancakes.
