Ingredients for 2 servings:
- 10 stalk(s) asparagus
- 2 m.-large tomato(s)
- 1 shallot(s)
- 3 tbsp olive oil
- 1 tbsp vinegar (herb vinegar)
- 1 tbsp balsamic vinegar
- ½ tsp mustard
- ½ tsp sugar
- Pepper from the mill
- herbs, fresh
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel the asparagus and slice diagonally into approximately 0.5 cm thick slices. Dice the tomatoes and add to the asparagus. Peel the shallot and finely dice it, adding it to the asparagus. Make a dressing from vinegar, oil, mustard, sugar, and pepper and drizzle it over the salad. Add plenty of finely chopped fresh herbs, mix everything together, and let it marinate well. The herbs mean you don’t need to add salt. Served with some baguette, this portion is just enough for me alone; as a side salad or as an appetizer, the recipe is sufficient for two people.
