Lamb's lettuce with cranberries and raspberry dressing

Ingredients for 2 servings:

  • 500 g lamb’s lettuce
  • 4 large tomatoes or cocktail tomatoes
  • possibly cucumber(s)
  • 1 handful of cranberries, dried
  • possibly Parmesan or cheese strips
  • possibly cooked ham or Serrano ham
  • 100 g raspberries, fresh or frozen
  • 2 tbsp rapeseed oil
  • 1 tbsp honey
  • 1 pinch of medium-hot mustard
  • Salt
  • pepper
  • chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the lamb’s lettuce, slice the tomatoes, dice some cucumber if desired, and arrange on two plates. Sprinkle half a handful of dried cranberries on top. If you like, grate Parmesan cheese or slice the cheese and ham into strips and scatter them on top. For the dressing, mix the oil, honey, mustard, and spices well, ensuring the honey blends well. Purée the raspberries and add them. Mix well again and season with more spices if desired.
