Ingredients for 3 servings:
- 1 onion(s)
- 2 cloves garlic
- 30 g margarine or clarified butter
- 300 g leaf spinach, frozen
- broth, instant
- pepper
- nutmeg
- 250 ml whipped cream
- 125 ml milk
- 1 baguette(s) – roll
- 100 g cheese, grated, e.g. mountain cheese
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Finely dice the onion and garlic cloves and sauté in the margarine until translucent. Thaw the spinach in the margarine, season with broth, pepper, and nutmeg. Add the milk and 1/8 cup of cream, bring to a boil, blend until frothy, and season again to taste. Cut the baguette into thin slices and briefly toast under the grill. Sprinkle the cheese over the top and grill until the cheese has a golden crust. Whip the remaining cream until almost stiff peaks form. Ladle the soup into warmed bowls, add a dollop of cream to the center of each bowl, and serve with the crusts.
