Fried potatoes with fried egg – A hearty and simple recipe

Ingredients for 2 servings:

  • 500 g potatoes, waxy
  • 1 onion(s)
  • 3 tbsp vegetable oil, e.g. sunflower oil
  • salt and pepper
  • n. B. Paprika powder, sweet
  • 4 eggs
  • a few stalks of parsley or chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the potatoes thoroughly and brush them to remove any dirt. Then cut them into even slices or cubes. Heat the vegetable oil in a pan and fry the chopped onion until translucent. Add the potatoes to the pan and fry over medium heat, stirring occasionally, for about 15-20 minutes, until golden brown and crispy. If you prefer, you can fry them a little longer for a more intense color. While the potatoes are frying, heat a separate pan and prepare the fried eggs. Add a little oil to the pan and gently crack in the eggs. Fry the eggs over medium heat until the whites have set but the yolks are still slightly runny. Season with salt and pepper. Once the fried potatoes are crispy and golden brown, season with salt and pepper and arrange on a serving platter. Carefully place the fried eggs on top of the fried potatoes. Optionally, garnish the plate with fresh parsley or chives for a fresh touch. Serve immediately.
