Ingredients for 1 servings:
- 3 onions
- 3 cloves garlic
- 5 eggs
- 80 g butter
- 200 ml milk
- 100 ml olive oil
- 400 g flour
- 1 packet of baking powder
- 500 g creamed spinach or leaf spinach
- 1 cup sour cream
- salt and pepper
- chili powder
- 200 g cheese, grated, mozzarella and Emmental

Peel the onions, halve them, and thinly slice them. Peel the garlic. Fry the onions in a pan and add the spinach. Season with salt, pepper, and chili. Crush the garlic and add it. Simmer until the liquid has reduced. Then let it cool. Beat the eggs with a good pinch of salt and a pinch of sugar until frothy. Bring the butter and milk to a boil and add to the egg mixture while still hot. Stir in the olive oil and fold in the flour and baking powder. Line a baking pan with at least 5 cm of baking paper and preheat the oven to 150°C (fan oven). Pour 2/3 of the batter into the baking pan. Add the sour cream to the spinach mixture and spread it over the batter. Pour the remaining batter on top. Bake on the middle rack of the preheated oven for about 40 minutes. Remove the cake, spread the cheese on top, and bake for another 10-15 minutes.
