Ingredients for 4 servings:

  • 250 g rolls (pretzel rolls), diced
  • 100 g apples, grated
  • 125 ml milk
  • 50 ml milk
  • 125 ml cream
  • 25 g onion(s)
  • 5 g sugar
  • 2 egg yolks
  • 2 egg whites, beaten to stiff peaks
  • ½ tbsp cornstarch
  • ¼ tbsp baking powder
  • nutmeg
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Mix the pretzel cubes with the grated apples. Finely chop the onions, fry, and deglaze with 125 ml cream and 125 ml milk, thickening with cornstarch. Pour the warm liquid over the pretzel mixture. Mix the egg yolks with sugar, baking powder, spices, and 50 g milk and fold into the mixture. Carefully fold in the beaten egg whites. Pour the mixture into a greased rectangular springform pan and bake at 180°C for 20-25 minutes.
