Coconut milk waffles

Ingredients for 1 servings:

  • 200 g desiccated coconut
  • 1 liter of milk
  • 6 eggs
  • 200 g sugar
  • 2 packets of vanilla sugar
  • 500 g flour
  • 100 g cornstarch
  • 1 packet of baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Very suitable for the iron for Belgian waffles, but also for the normal waffle iron

Soak the desiccated coconut in the milk. Add the eggs and blend the mixture with a hand blender until foamy. Stir in the sugar and vanilla sugar thoroughly. Combine the flour, cornstarch, and baking powder and stir into the coconut mixture. Bake waffles in batches in a waffle iron on the highest setting. Makes approximately 30 waffles. This works well in a Belgian waffle iron, but also works well in a regular waffle iron.
