Broccoli with tofu and moo-err mushrooms

Ingredients for 2 servings:

  • 3 tbsp oil
  • 1 pack of tofu
  • 1 broccoli
  • 1 handful of dried mu-err mushrooms
  • 1 onion(s)
  • 10 tbsp soy sauce
  • 10 tbsp water
  • 4 tbsp, levelled sugar
  • some chili
  • sesame

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

My favorite medicinal mushroom dish

First, the Mu-Err mushrooms are soaked in water and boiled for at least 15 minutes. The cooking water should then be discarded. Meanwhile, the broccoli can be cleaned and cut into florets. Now the onion should also be chopped, ideally into thin strips. Next, the tofu is diced and fried in oil until crispy. Deglaze with the water and soy sauce and add the broccoli, onion pieces, and mushrooms to the pan. The sauce should then be seasoned with sugar. With this sauce, it is important that not too much of it evaporates. Therefore, it can be served shortly after, as it tastes best when the broccoli is still very crunchy. If desired, you can then season the dish with chili and sprinkle sesame seeds on top. It also tastes good if you fry some garlic (1-2 cloves) along with the tofu. Serve with rice. These mushrooms, also known as “Jew’s ears,” can also be found in the wild in this country. They are particularly common in old elderberry stands, even in winter. Judas ears are also considered medicinal mushrooms because of their extremely healthy properties.
