Ingredients for 4 servings:

  • 500 g chicken breast, shredded
  • 2 tbsp vegetable oil
  • 1 onion(s), finely chopped
  • 1 garlic clove(s), finely chopped
  • 400 g fresh porcini mushrooms, cleaned and weighed, cut into not too small cubes
  • 1 can of tomatoes, peeled and pitted, cut into small cubes
  • 100 ml white wine
  • 200 ml chicken broth
  • 200 ml cream
  • ½ bunch parsley, finely chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Season the meat with salt and pepper. Heat the oil in a frying pan and add the meat in batches, searing until well browned. Remove and set aside. Add the mushrooms to the same pan and sear until well browned. Reduce the heat to low, add the onion and garlic, and sauté. Deglaze with the white wine and reduce it almost completely. Pour in the stock and reduce by half. Pour in the cream and simmer until the sauce thickens. Add the meat and diced tomatoes and simmer for 10 minutes over low heat. Season with salt and pepper. Add the parsley before serving. Suitable side dishes: Fresh pasta and vegetables of your choice.
