Chicken and mushroom pan with sour cream

Ingredients for 3 servings:

  • 600 g chicken breast fillet(s)
  • 300 g mushrooms as desired
  • 2 onions
  • 200 ml sour cream
  • 150 ml vegetable stock
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Low-carb

If using frozen chicken breast fillets, thaw them beforehand. Cut the breast fillets into larger pieces and sear them well in a pan with a little oil. Season the meat with salt and pepper, remove from the pan, and set aside. Fry the onions in the pan with a little oil, then add the mushrooms. Fry everything for 2-3 minutes. Then add the meat back in. Stir in the broth and sour cream and simmer uncovered for about 15 minutes, until the liquid has reduced to the desired consistency.
