Ingredients for 4 servings:

  • 2 medium-sized bell peppers, red and green
  • 1 large onion(s)
  • 1 small can of corn
  • ½ jar shallots
  • 2 tbsp tomato paste
  • 200 ml vegetable broth, instant
  • 3 tsp oil
  • 4 tbsp ajvar
  • salt and pepper
  • Paprika powder, sweet
  • Cayenne pepper
  • Sugar
  • 1 garlic clove(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the bell peppers into thin strips and the onions into thin rings. Sauté the onions in the oil until translucent, add the bell pepper strips and fry. Add the tomato paste and mix well. Add the crushed garlic clove. Then deglaze with the stock and stir well. Reduce until the sauce is still slightly runny. If it becomes too thick, add a little more stock. Add the ajvar and season to taste. You can make it sweeter or more savory, depending on your preference. Therefore, there are no specific spice quantities. Everyone can decide for themselves. Finally, add the corn and the pearl onions. This is how I remember my mom’s recipe.
