Pumpkin – Apple – Curry

Ingredients for 4 servings:

  • 1 kg pumpkin(s) (e.g. Hokkaido or butternut squash)
  • 2 onions
  • 4 m.-sized apples
  • 1 lemon(s), the juice
  • 2 tsp curry
  • 1 tsp vegetable broth (instant)
  • 100 g whipped cream
  • salt and pepper
  • oil
  • chili powder

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Cut the pumpkin into pieces, remove the seeds, cut into wedges, and peel. Cut the flesh into pieces. Peel and dice the onion. Peel, quarter, core, and finely chop the apples. Drizzle with lemon juice. Heat the oil and sauté the onion and pumpkin for about 5 minutes. Sprinkle the curry powder over the pumpkin and sauté. Deglaze with 1/4 liter of water and cream and bring to a boil. Stir in the stock and simmer for about 15 minutes. Add the apple and cook everything for about 10 minutes. Season to taste with salt, pepper, curry powder, and chili.
