Ingredients for 1 servings:
- 3 kg zucchini
- 1 kg onion(s)
- 1 kg sugar
- 1 liter vinegar (herb vinegar)
- 3 tbsp mustard
- 3 tbsp curry powder
- 3 tbsp paprika powder
- 2 tbsp cayenne pepper
- 3 tbsp flour
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes
Side dish or dip
Finely dice the zucchini and onion, add a little salt, and let stand overnight. Squeeze out the excess liquid and cook with sugar, vinegar, and mustard for 30 minutes. Add the remaining spices for the last 10 minutes and thicken with flour. While still hot, pour into clean, rinsed jars and let cool upside down. Keeps for about six months.
