Ingredients for 4 servings:
- 400 g quark
- 4 stalk(s) asparagus, green
- 2 bunch parsley, finely chopped
- 1 tbsp capers
- 1 garlic clove(s)
- some pepper, from the mill
- some salt
- possibly cucumber(s)

Peel the lower third of the asparagus and cook it al dente in salted water. Once cooled, cut it into slices about 1/2 cm thick. Stir the quark in a bowl until creamy, add the garlic, and mix well with the asparagus, capers, and chives. Season with salt and pepper. This goes well with boiled potatoes, fish, or cold meat. Outside of asparagus season, cucumbers can be used instead.
