Ingredients for 4 servings:

  • 400 g pasta, preferably orecchiette or macaroni
  • 2 zucchinis
  • 1 large bell pepper(s)
  • 2 small onions
  • 1 garlic clove(s)
  • 2 tomatoes
  • 2 carrots
  • 150 g salami, in one piece, not too hard
  • 150 ml vegetable stock
  • 1 tsp oregano
  • salt and pepper
  • possibly lean ham, diced

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Finely chop the onions and garlic, and dice the vegetables. Sauté everything except the tomatoes in a little olive oil. Cook the pasta in salted water until al dente. Dice the salami and fry briefly. Deglaze with the broth, add the tomatoes, and simmer for 5 minutes, until the vegetables are cooked but still have a bite. Mix the vegetables with the pasta and season with oregano, salt, and pepper. My kids love this quick and healthy meal. The salami makes it! The low-calorie version uses lean ham cubes instead of the salami!
