Bread casserole with herb curd

Ingredients for 4 servings:

  • 4 rolls
  • 5 tbsp herb butter
  • 3 tbsp herb mix (rosemary, sage, thyme, parsley)
  • 250 g mushrooms
  • 2 bell peppers, red
  • 1 onion(s)
  • 200 g cooked ham
  • 3 eggs
  • 1 package of herb quark, spring quark or tzatziki quark
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

This dish is perfect for using up leftover rolls. Dice the rolls, fry them in the herb butter until crispy, mix with the finely chopped herbs, and fry briefly. Separately, fry the mushrooms in hot oil, halving or quartering them depending on their size. Add the diced bell peppers and the diced onion, and fry everything briefly. Add the strips of cooked ham and fry briefly. Mix the herb butter rolls with the contents of the pan. Mix the eggs with the herb quark (or one of the alternatives mentioned) and pour over the bread mixture. Bake in a preheated oven at 200°C (top/bottom heat) for 30 minutes.
