Cucumber and tomato soup with melon

Ingredients for 4 servings:

  • 1 ½ kg melon(s), (watermelon)
  • 4 tomatoes, peeled and pitted
  • ½ cucumber(s), peeled and pitted
  • 2 spring onions, only the green part – finely chopped
  • salt and pepper
  • Mint or basil

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

cold, refreshing – also suitable for cooling down between 2 spicy courses

Cut the peeled and seeded tomatoes into 1 cm cubes, setting some aside for garnish. Scoop out the flesh from the melon, remove the seeds, and finely chop everything. Peel the cucumber, remove the seeds, and cut the flesh into pieces. Blend the tomatoes, cucumber, melon, and the green parts of the spring onions until smooth. Finally, stir in the remaining diced tomatoes and add the chopped mint. Season with salt and pepper. Chill. This cold soup will have a special flavor if it is allowed to stand for 12 hours.
