Ingredients for 4 servings:

  • 2 bulbs of fennel, finely sliced
  • 2 pieces of beef tomatoes, diced
  • 2 cloves garlic, finely chopped
  • some olive oil, for frying
  • e.g. salt and pepper
  • Balsamic vinegar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Sauté the shaved fennel in olive oil until it’s al dente and lightly browned. Stir occasionally. Then add the diced tomatoes and garlic for 1-2 minutes, then season with salt and pepper. Transfer the fennel to a serving dish (or shallow dish) and season with balsamic vinegar, pepper, and salt. Let it marinate for about 1 hour.
