Cheese and spinach sticks

Ingredients for 3 servings:

  • 125 g cheese, e.g. B. Cheddar, mozzarella or Gouda
  • 125 g spinach, fresh
  • 125 g cream cheese
  • possibly paprika powder, sweet
  • salt and pepper
  • some flour
  • 3 eggs
  • some breadcrumbs
  • some sunflower oil

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

best with a light yogurt dip

Clean the spinach and place it in boiling salted water for 2 minutes. Then refresh it in ice water to retain its color. Grate the cheese. I like to use cheddar because it’s more flavorful. If you prefer a milder flavor, you can also use mozzarella. A blend of feta and Gouda also tastes great. Now mix the cheese, spinach, and cream cheese and season with paprika, salt, and pepper. Spread the mixture about 1 cm thick on a sheet of baking paper and place it in the freezer for at least 30 minutes. In the meantime, prepare the breading station by whisking the egg and placing the flour, egg, and breadcrumbs in separate deep dishes. Cut sticks from the cooled mixture and coat them first in flour, then in egg, and then in breadcrumbs. If you prefer a thicker coating, you can repeat the last two steps. Heat a pan on the stove with a little oil and fry the sticks until golden brown all over. Best served with some yogurt dip and salad.
