Ingredients for 2 servings:

  • 2 rolls (souls, baguettes) or similar, vegan
  • 1 can of jackfruit
  • 40 g soy granules
  • 1 large onion(s)
  • 3 cloves garlic
  • n. B. Oil for frying
  • n. B. water
  • 2 pinches of smoked salt
  • 2 pinches of cayenne pepper
  • 2 tsp paprika powder
  • 130 ml BBQ sauce, vegan
  • 2 tomatoes
  • 4 lettuce leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Drain the jackfruit, rinse with water, and let it drain. Tear the jackfruit pieces into fibers with your fingers and chop the tough pieces into small pieces with a knife. Halve the onion and slice them finely, then press the garlic. Add oil to the pan and fry the onions and garlic over medium heat. Add the soybean strips and jackfruit and fry until crispy. Deglaze with a little water, add the spices, and simmer over low heat for 10 minutes. Once the water has almost evaporated, add the BBQ sauce and continue simmering. Wash the lettuce and tomatoes, and slice the tomatoes. Preheat the oven to 160 degrees Celsius (320 degrees Fahrenheit). Place the jackfruit in a baking dish and bake for 10 minutes. Cut the bread or baguettes open lengthwise along the side so that they can be folded open but not completely. Add the lettuce, tomatoes, and jackfruit and cover with the lid.
