Stuffed sweet potato in modular style

Ingredients for 1 servings:

  • 1 sweet potato(s)
  • 120g protein source, e.g. tofu, beans, lentils, scrambled eggs, hummus…
  • 120 g vegetables, e.g. peppers, tomatoes, broccoli, pumpkin…
  • 1 handful of topping, e.g. pesto, cheese, breadcrumbs, croutons, nuts…
  • 1 tsp spice(s), e.g. salt, pepper, nutmeg, rosemary, thyme, cumin…
  • 1 sprig(s) of fresh herbs, e.g. rosemary, basil, thyme, oregano…

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

vegetarian and vegan upon request

1. Bake a sweet potato whole in the oven at 180°C (convection oven) for one hour or boil it in a pot of water for 30 minutes. 2. Select a protein and place it on top of the potato. 3. Select vegetables, cook briefly in the pan if desired, and add them. 4. Select a topping and pour it over the top, then top with spices and herbs.
