Spinach quiche with ham and buffalo cheese

Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter
  • 5 tbsp milk
  • 1 pinch of salt
  • 300 g spinach, fresh
  • 125 g smoked ham cubes
  • e.g. butter (goat butter)
  • 1 small garlic clove(s)
  • 1 m.-sized onion(s)
  • 200 g cheese (buffalo cheese), e.g. feta, mozzarella
  • 125 ml cream
  • 75 ml milk
  • 2 m.-sized eggs
  • pepper
  • Salt
  • nutmeg
  • chervil

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes

Knead the flour, butter, milk, and salt into a dough and then chill for half an hour. Fry the ham cubes until crispy. I like to use a little goat butter for this; it adds a nice flavor. Peel and finely chop the onion and garlic clove, add them briefly to the ham cubes, and sauté until translucent. Set everything aside for the time being. Blanch the spinach and, if necessary, cut into coarse strips. Make a glaze with the cream, milk, eggs, nutmeg, pepper, chervil, and a very small amount of salt and whisk well. Roll out the dough into a tart tin and prick all over with a fork. Now add the spinach, ham cubes, and onion, spreading the glaze evenly in the tin. Crumble the cheese over the top and bake at 180°C (fan oven) for about 30 minutes.
