Baked eggplant with tomato sauce

Ingredients for 1 servings:

  • 1 eggplant(s)
  • 1 tsp tomato sauce, ready-made, per eggplant slice
  • 1 handful of cheese, grated or more
  • 1 tomato(s), diced
  • basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegetarian

Cut the eggplant into approximately 1 cm thick slices. Place on a baking sheet lined with parchment paper and spread with the tomato sauce. Top with tomato and basil, if desired. Sprinkle the cheese over the eggplant slices. Bake in the oven at 200°C for approximately 15 minutes.
