Peel the garlic and onion and chop them together with the parsley. Drain the chickpeas, add them, and puree everything together. Add the flour and baking powder and season well with salt, pepper, and coriander. The dough will be quite sticky. Wash the potatoes and slice them with the skin on. Place them in a bowl and add the oil, salt, pepper, rosemary, and French fry seasoning. Place them on a baking sheet and bake at 200°C (top/bottom heat) for about 30 to 40 minutes. Meanwhile, chop the zucchini and onions and fry them separately in a pan with a little oil. Wash the lettuce leaves. Form the chickpea dough into small balls. Add plenty of oil to a pan and fry the falafel in batches for about 5-10 minutes. Then place them on kitchen paper to absorb the fat. Cut open the burger buns and place them briefly in the hot pan without oil, and fry until slightly crispy (no more than 1 minute). Now top the bottom of the burger bun with cheese, zucchini, lettuce, onions, falafel, and your choice of burger sauce. Place the top of the burger bun on top. Serve with the baked potatoes.
