Ingredients for 4 servings:
- 1 bunch of soup vegetables
- 700 g potatoes
- 50 g butter
- ½ cup whipped cream or sour cream
- ½ meat sausage
- 1 onion(s)
- 2 bay leaves
- pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Clean the soup vegetables and potatoes and cut into small cubes. Melt the butter in a saucepan and briefly sauté the potatoes and vegetables (except the leek). Deglaze with 1 liter of vegetable stock. Add 1 whole onion and 2 bay leaves and simmer for about 10 minutes. Then add the sliced leek and simmer for another 10 minutes. Remove the onion and bay leaves and puree. Finish with cream or sour cream, add the diced sausage, and heat briefly again. Season with pepper.
