Ingredients for 1 servings:

  • 120 g zucchini
  • 1 tbsp chives
  • 1 small onion(s)
  • 2 cloves garlic
  • 210 g flour (type 405)
  • 40 g oat flakes
  • 1 packet of baking powder
  • ¼ tsp salt
  • Pepper, freshly ground
  • 100 g ham, cooked
  • 1 egg(s)
  • 50 ml oil, neutral
  • 20 g cheese (Emmental), grated
  • ¼ liter of milk
  • n. B. Cheese (Emmental), grated, for sprinkling
  • 1 tbsp parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 190°C. Wash the zucchini and cut into small cubes. Peel and finely chop the onion and garlic. Dice the cooked ham. Place the flour and oats in a bowl and mix with the baking powder, herbs, salt, and pepper. Combine the zucchini, onion, garlic, and ham with the flour mixture. In a second bowl, lightly whisk the egg. Add the oil, cheese, and milk and mix well. Add the flour mixture and stir until combined. Spoon the batter into prepared muffin cups, filling them two-thirds full and sprinkle with grated cheese. Bake in the hot oven for about 20-25 minutes. Remove from the oven and let cool in the pan for another 5 minutes. Cool on a wire rack or serve warm.
